The bridge adjustments screws "normally" face the pickup because it is much easier to adjust the saddles this way. When they face the tailpiece, it's difficult to get a screwdriver in there.

Are you counting the two pieces in the lower part of the guitar, separated by the waist? One piece in the lower bout and another piece in the horn? I think this started out a a single piece, then the became separated when the body shape was cut.
