I’ve built SG style guitar from scratch(the body) from an old bar top and I have these pick ups I bought which have an black earth wire, yellow/green & red conversion wire and a white live wire. (I’ll add pictures to show) I also have a les Paul solderless wiring harness. I’ve wired it with the conversion and live wire grouped together going to one screw clamp and the earth to the other, would this be the correct way to do this? I’ve built a sg style guitar from scratch but not too clued up on electronics, thanks for any help

Yes, 4 wire humbuckers have the extra wires to allow coil splitting and/or series/parallel switching. If you're not going to coil split or have series/parallel switching, the extra two wires get soldered together, taped off, and not connected to anything else. Definitely not connected to the hot wire.
Here's Duncan's wiring diagram for 4-conductor humbuckers with standard 2 volume, 2 tone, 3 way toggle and no extra splitting, parallel, or phase. Duncan uses different color coding on the wires. But you've got the black and white connected correctly according to your manufacturers chart and you don't need to figure out which colors the "conversion" wires correspond to unless you someday want to add series/parallel switching. https://www.seymourduncan.com/images/wiring-diagrams/2H_3G_2V_2T.jpg
